Serves 6
4 large brown onions, thinly sliced
1/4 cup brown sugar
60ml balsamic vinegar
2 large potatoes
160ml skim milk
3 eggs
4 egg whites, extra
40g grated reduced-fat cheddar cheese
2 tablespoons chopped fresh lemon thyme leaves
50g mixed lettuce leaves
Method:
Oil a 19cm round cake pan, line base with baking paper and set aside. Put onions in large, heated, oiled saucepan and cook, stirring, until soft. Stir in sugar and vinegar, cook over low heat for 10 minutes or until golden brown, stirring occasionally. Boil, steam or microwave potatoes until tender, then drain. Slice potatoes thickly, place in layers in prepared pan. Top with caramelised onions. Whip egg whites, mix in combined milk, eggs, cheese and thyme then pour over onions. Bake, uncovered, in moderate oven for 35 minutes or until frittata is firm. Serve hot or cold with lettuce.

Sweet Potato and Chicken Pizza
Serves 4
1 medium sweet potato, cubed
1/2 cup tomato paste
2 spring onions, sliced
6 mushrooms, chopped
90g cooked chicken, chopped
ground black pepper
90g grated reduced-fat cheese
4 round pita breads
fresh basil leaves
Method:
Preheat oven to 220°C. Boil sweet potato until cooked but still firm, or microwave, covered, on HIGH for 5-10 minutes. Spread pita bread with tomato paste and add all toppings except basil. Place on a non-stick baking tray and bake for 10-20 minutes (depending on base), until cheese is golden. Sprinkle with basil and serve.
